My problem is, mostly, 100% off the tee. Take out a long club, stick a peg into the turf and everything i know to be correct goes out the window. Far too much mental analysis, confusion, aggression towards the poor ball, over the top, off balance, casting, hacking, etc, all of which is doom. Every imaginable result has been mine for years. The most humiliating naturally is the ball going up and backwards over my head due to clubface going deep into the earth and under the ball. But in fact, on the practice ground i am a very different 'golfer' and am quite satisfied with all my clubs in terms of flight pattern, height, distance and consistency. I know what to do but under real conditions, i do not do it.   So what could an expensive golf  pro  do for me? Any ideas welcome.

Joe, do you have a 3/4 iron in the bag? If you do how well and how far do you hit it?

Sounds like you need to get yourself a solid pre-shot routine. I am sure a pro could help you with that. This is something you can hone at the range then take to the course.
