Jimmy Buffett and the Coral Reefer Band Fruitcakes Tour Summer 1994.  They had The Iguanas open in the parking lot which was a blast.  They had a great stage set up.  At intermission, they showed a short funny movie set in Buffett's seaplane.  They needed help to fly the plane.  Suddenly, Indiana Jones (Harrison Ford) comes into the cockpit.  It was hilarious.

The whole atmosphere was a party from start to finish.  We probably got to the parking lot at 2PM for an 8PM show.  The tailgating was terrific with folks setting up pools and bars and trucking in their own sand (typical of Buffett shows).  When you walked around, you got free shots or food from just about anyone.

We camped at a nearby site and went to all 3 shows.  Each was a bit different including the crowd.  I needed a week to recover from that.

Tough call, as someone who works in the industry I have seen well over 800 "arena" concerts and thousands of shows in general.

Some top picks:

Neil Young and Crazy Horse at the old Forum (probabally around 1986, opening acts were Social Distortion and Sonic Youth. Neil Young made them look like bubble-gum pop bands, seriously, the dude rocks!) Ears were ringing for three days...

Blue Rodeo - Saw them in a small venue (under 300 people in the audience) magical. whole audience in a trance.

Big Sugar - small venue again (the old Club Soda), 800 seat cabaret setting. Geordie Johnson is an absolute monster on the guitar!

AC/DC many times, always amazing!

U2 360 tour, just for it's over-the-top ism.

Performers that surprised me:

Justine Timberlake - guys got talent.

Peter Gabriel - mesmerizing showmanship

Van Halen - was never a big fan, always found them to be a little to 80's cheese for my tastes, but I ran a followspot for their reunion tour with David Lee Roth and Eddie won me over. Never appreciated how insanely good he is until I saw him live. True virtuoso - no hyperbole here - the real deal.

Regrets:

Never saw Tom Waits live and probably never will, I will always regret this but he hardly tours at all these days.

Roger Waters - had several opportunities but didn't get my shit together, may have missed the boat.

Too many to pick just one. Tori Amos in a church, Suzanne Vega, Natalie Merchant, Annie Lennox, Pink Martini, Gotan Project, all of which not more than 50 feet away. Many many chamber music recitals. On a barge, in 300+ yo churches.

I don't go to many, so my sample size is pretty small here. Bruce Springsteen was just out of this world. He is just non-stop putting it all out there for 2-3 hours. You can't help but feed off his energy through out the concert.

Yeah, I have heard great things about his live performances. I would like to see him in concert.

I saw Mumford & Sons at the Osheaga Festival and they were pretty amazing. They fired so much confetti in the air during their finale that you couldn't even stage for about 8 minutes after the show ended. Very cool.

Ernest it is amazing to have seen the amount of shows you mentioned and not seen Bruce, his shows are night well spent. Highly recommend it but he certainly doesn't tour like he used to but back in the late 80's and early 90's there was nobody better.

David Bazan at First Ave in Minneapolis when he was touring under Pedro the Lion when the Control album came out around 2002.  Damien Jurado was there as well so it was pretty cool.  I am sure nobody will know what I am talking about but, oh well.

Carrie Underwood had a good show I saw a couple of years ago.

George Strait was good a couple of years ago when I saw him.

Trans Siberian Orchestra a few years ago was awesome.

My wife loved it when I surprised her and took her to see Bette Midler in Las Vegas. It was a great show.

My wife loved it when I surprised her and took her to see Michael Buble in Atlanta. It was a great show.

Best I've ever seen was Norah Jones in the Ovens Auditorium in Charlotte Nc a couple of years ago. Small crowd. Awesome show.

I've seen YouTube videos of their live shows before. Always looks pretty cool.
