If an iron is bent upright, does that make it a little harder to use when opening it up? Oppiste for flat, easier to open the face?

I believe you are correct.

I had a set that were upright 2* and my ball trajectory was a constant hard draw. My clubfitter flattened it out a bit and it started going dead straight, nice draw, and even a nice fade depending on what I was trying to do with it.

With irons, it's vitally important that the lie is set up for your swing. Good swings can result in poor shots because of irons being either too flat or too upright. It's well worth taking the time to get your clubs checked by your club pro.
