Why do wedges always come w/ heavy DG shafts? Wouldn't you think a lighter shaft would offer better feel?

At least manuf. should give us more options.

Also what is "wedge flex" exactly?

wedge flex is usually stiff. No need for to much action on a club designed for 100 yards and in.

Are you sure about that? I have been told wedge flex is a softer flex. The reason wedges rarely come standard in light weight shafts is because experienced player who buy wedges separately most often play standard weight shafts or order exactly what they want. I do agree that the major reason is because wedges are rarely swung full or to maximize distance so light weight is less important than feel. If you swung them as full out as your five iron matching them to your other irons would make sense.

I guess varying degrees of "wedge flex" definitions will be the norm here. I was just talking about this topic to my club pro the other day and his interpretation is that wedge flex is a middle ground between stiff and regular so as to appease a wider range of golfer. Same basic principle as a "uniflex" shaft that are in some clubs, namely a Callaway fairway wood I carried for a time. In any case, I have the same brand and flex in my wedges as I do my irons.
