What are the all the different types of grinds and grooves for wedges? Also, explain the use and the effect of each.

Check out the Ping WRX site. There's a pdf that has pictures of the different grinds, on the last page as I recall. Different shops sometimes have slightly different names, but it will give you a good idea of the grinds that are available and what they are intended to do.
