My understanding is that offset on clubs is meant to help you square the club face at impact. But does this actually help you play a draw?

Yes, typically, an offset clubface promotes a draw or otherwise lessens a slice.

My Tools of Ignorance:

Driver: Ping I20 9.5*
Woods/Hybrids: Cobra AMP 3W and 3 HY

Irons: Cobra AMP 4-GW

Wedges: Callaway Forged Copper 56* and 60*

Putters: Scotty Cameron  35" (Several of the flow neck blade variety)

Ball: Bridgestone B330-RX and Srixon Z-Star

Bag: Nike Performance Carry

Im probably thinking about it way too much, but my clubs have decent offset, and when i address the ball i aim the clubface square to my target. Does this mean im negating the offset?

Clubs with extra offset (e.g. game-improvement or ultra game-improvement irons) are intended to help you square the club at impact and provide amazing forgiveness for off-center hits. Having played some of these for a couple of years after a back injury, my experience tells me that they neither encourage a draw or a fade. They just help you hit the ball straighter.

Whether or not you have a game-improvement irons or not, you would generally want to square your clubface to your target. Doing so does not negate the offset. It actually allows the iron to work as designed.
