So lets keep it simple. I have a Nike VR fairway metal thats a "5" with 19 degrees of loft.
Dude I bought it from is now selling a simmilar club but its a "2" with 18 degrees of loft.

Why only 1 degree difference when really its "3" clubs different?

What am I missing?

It's most likely that the club he's selling now is what's referred to as a hybrid, they're a mix between a wood and an iron. You bought a 5 wood from him whereas now he is selling a 2 hybrid (i.e. replacing a 2 iron).

In the Bag 2013:

Driver:  FT-9 Draw i-Mix 10.5*

3 Wood:  R11s 15.5*

3 Hybrid:  Idea Tech V3 19*

Irons (4-PW):  ZB Forged

Wedges:  Tom Watson PVD; 52.07*, 56.13*, 60.07*

Putter:  White Ice #1 33"

Right so... do I want a whole different club for 1 degree of loft?

I currently carry a Driver, "3" Hybrid w/ 19 degrees of loft, "5" fairway also at 19 degrees, then 4 iron - PW then 52 56 and 60

Do I need a 2 hybrid in there?

I don't think a 2 hybrid is necessary. You probably want to drop either the 5 wood or 3 hybrid for a 3 wood to bridge the distance between your driver and irons. Carrying two clubs with the same loft is kind of redundant.

Being you are a 15 HDCP, manufacturing reps from Callaway and Adams would recommend you stay away from the 2H. (That's what they said at a demo day).

Most 2Hs have pro or tour model heads, and heavier shafts. You would need above-average clubhead speed to use it from the rough.

When you're considering club mix for the longer sticks, pay attention to the loft specs for a given model.  Consider the original RBZ FWs:

Club Loft

Shaft

Length

3W 15* 43.5"
3W.HL 17* 43.5
5W 19* 43"
7W 21* 42.5"
9W 24* 42.5"
4H 22* 40.5"

I got fitted last summer, and ended up with a 3W.HL - really a 4W - and a 7W. I have about 15-18 yards difference between the two. So, I returned the 5W without having hit it.

I also have an RBZ 4H = 22* , but it goes about 15 yards less than the 7W due to the shorter shaft.
