Tour Pro's Swing Speed and Iron distances

I hear a lot of pros talk about hitting it "three-quarters" or "80%" or whatever, is this strictly accurate or just a 'feeling' they have?

Woods says his 8-iron goes 158 at about 80% power, that would mean his normal full-out 8-iron is around 197 yards.
Is this right or do certain conditions have to come into play, e.g. hot weather, slight downwind?

They can hit a lot of clubs really far most of these guys. But why try to? Especailly with a high iron or wedge. They are not looking for distance, but more so for accuracy.
