Tour vs Non Tour fairway woods

Why is it that companies tour versions of fairway metals have "shallower faces" and non tour have deeper faces? It sounds like the tour would be the one that get the ball in the air quickly? correct me if I'm wrong

The difference in the Callaway FT fairway woods are that the non-tour version has a slightly closed face [tour version being sqaure].
