My current shafts are DG/S300 in my irons. I'm planning on getting a Titleist 503H Hybrid. What would suit me better and feel more similar to the flex of my irons..the 85S or 65S?

Well the flex of the two will be really close since they are both stiff. The only real diiference between the 65 and 85 other than the obvious weight will be the torque. Because of the weight the 85 will have less torque than the 65. This may make it feel more stiff. Consider though that the steel shafts in your irons have less torque than either of the graphites do. Basically the deal is swing the lightest shaft you can control. If you have a smooth swing I would go with the 65. If you go at it real hard from the top of your swing then the 85 might be best.
