what are some easy ways to figure out what my handicap is

A good approximation is to take your last few (say, 10) rounds and determine the 5 where you played the best. Subtract par from each of your 18-hole scores. Average the scores. That's a good approximation of your handicap, especially if you only ever play once course.

It isn't the official way. There's plenty of good software to do that for you, or join a handicapping service and post scores.

do they have to be rounds of 18 or can i do it by rounds of nine or combine 2 separate rounds of nine or anything like that.

If you sign up for a handicapping service, you pay an annual fee and post scores. They issue you a card and so on. It's a nice thing.

There's pay software, for certain, but it isn't an official handicap. There may or may not be free software, too.
