If my 6 iron spec is 37.5" and 62.5* lie, what if I get clubs where the 6 iron is 37.25" long, what will the lie be?

Does it get 1 degree flatter for every quarter inch?

And the bigger the number the flatter or more upright?

The lie of the club (which is what you're referring to) won't change. What'll alter is it's dynamic lie as you swing it. Assuming your posture doesn't change, you'll find a shorter club of the same lie beginning to strike the ground toe-end first i.e. it'll appear to be too flat. If you get a club that's shorter than you're used to, you should probably need it made somewhat more upright (how much is another question though!) and you'll have to stand a touch nearer the ball.

The length & lie angle of each brand's clubs "standard" is different.

Examples:
PING black dot - S57 6 iron - club length 37.25" - lie angle 61.50°
MIZUNO - - - - MP-57 6 iron - length 37.25" - lie angle 61°
BrSTONE - - - J36 6 iron - length 37.25" - lie angle 62.5°
TITLEIST - - - AP2 6 iron - length 37.5" - lie angle 62.5°

The bigger number = the more upright.

You have to have the same shaft and flex for comparisons to be valid also.
