I've got no help for you on your course list, but this just reminds me of my freshman year in college.  Our golf team took a team trip over spring break to the Woodlands, TX.  We stayed with families that lived on the Woodlands courses and played twice a day for 8 days, culminating in a qualifying tournament at Champions.  Golf, beer, golf, beer, sleep, repeat.  That was without question the best week of my life up to that point.

I threw up during a team breakfast with Jackie Burke, Jr. in a private dining room at Champions.  That one is actually a pretty good story, and it was the team captain's fault as much as it was mine.  Don't get too mad at your guys if one of them gets a story like that during your trip...doesn't necessarily mean they're destined to be f@#$-ups their entire lives.

      We just completed our winter league (Jan 1 - April 30)  Our scoring was simple.  We used the 18 birdies app.  You get 1 point for every member of the league you beat head to head in an 18 hole round (no handicap).  You also get a point for completing the round.  Therefore 4 members play a round- winner of the round gets 4 points, runner-up gets 3, third gets 2, and last gets 1.  Points accumulate throughout the season.  You can play as many times as you want. Our winner accumulated 110 points while second was 102 and third was 97.  We had a total of 16 members in the league.  No issues whatsoever.  All about fun.

      If he had to hit over the bunker, I'm guessing he was further from the hole, although "in front of" implies the opposite.  If that's right, that may have been the right spot for penalty relief, a single PS.
