A little history on me.. I grew up gripping the club cross handed. (Right handed) I golfed that way up until

3 years ago. I am now in my mid 40's.  I decided to make the switch to a conventional grip 3 years ago because I was

not improving, and found it hard to get help.

I found a PGA pro, and took lessons, starting from scratch with a "correct" grip.

I have had decent success, and now am comfortable with the new grip.

I'm not a great golfer by any means, about a 20 handicap.

My big issue that I haven't been able to solve is that I randomly

will leave the club face open at contact with my irons. This issue will show up during a round

or a session at the range, and I cannot correct it.

I was wondering what kind of issues others had while converting

their grip to a conventional grip from cross-handed, and how they felt with it.

Could it be a fatigue issue? Why do I not have this issue with my woods?

All suggestions, comments, and questions are welcome.

Welcome to the forum. There are a lot of things that can cause issues during a round. It is tough to pinpoint them without actually seeing the swing. Fatigue can play a part if you always see the issue at the end of a range session or round.

One of the benefits of being a Sand Trap member is you can post a video of your swing in the My Swing section and folks will work with you to improve. Our swings are remarkable consistent even if they have flaws. Sometimes the randomness we see in a shot is due to a minor variation in our set up on turf condition, etc. and not a real change in our swing.

I highly recommend starting a My Swing thread. You can post videos of short game, putting too in addition to full swings. We've got a couple of top notch instructors on the site, quite a few low handicap players and many other players who will comment on your videos with advice and drills. Many of us may have had similar issues and will show you what helped.
