I have noticed lately that on some of my shots at the range, I will look at the club face and there will be a good amount of grass and what not stuck in the grooves of my club where I struck the ball - usually in a more or less perfect circle like there was already grass on the ball and simply "stuck" to the club. This seems to happen most when the ball flight is straight and true.

However, I was wondering if this grass and dirt "residue" means that I hit the ball well (i.e. hit the ball first just before I hit the ground as you are supposed to do), or whether it is due to hitting a fatter shot.

Or, does it have nothing to do with anything and it just happens sometimes?

From the sounds of your catching the grass before the ball which would be technically fat but another factor would be are you hitting out of high grass as well. Either way your still catching the grass first and great ball striking shouldn't give you this result.
