I have been playing golf since I was 6, I am now 30 and still have a handicap over 10. I do not have any problems with contact, distance, sand, putting, or 60 yds in. I can play flops, fades, draws, knock downs, and etc.. My problem is with my mid irons. Again, my contact is very good:

my yardages (full swings with up to a 2" choke)

60* <65yds
56* 85-10yds
W-110-130yds
9- 135-150yds
8-155-163yds
7-165-174yds
6-175-182yds
5- 185-195yds
4- 195-205yds
3 hybird 225yds
3 wood 250yds
Driver 275-300yds

I'm fairly consistent off the tee ( I at least keep it in play)
But my second shot is either straight (50%) 20 yards left, pull/no hook (30%),, or 20 yards right push/fade (20%) My feeling is all these errors happen at the top of my backswing. I either fire my hands to fast and pull the ball or fire my hips to fast and loose the ball right. Am I correct in feeling this way or could it be something different. Any practice manuvers I can work on? Any ideas

play the same shot time after time after time it helps with muscle memory in my opinion like if you like the draw go to the range and only hit draws and do it for the whole bucket.make it repetitive and second nature to hit only one shot.when i done this i shaved 1.1 off my handicap.thats just my opinion though.

I have learned to control my ball flight and distance with these three things:

1) shorten my backswing
a) when I need to have control of the ball I will take a 3/4 backswing

2) watching the shaft position on my backswing
a) I can hit it straight by keep the shaft straight on my backswing
b) fade the ball by taking the shaft outside the line
c) draw the ball by taking the shaft inside the line

3) take more club and shorten my backswing to less than 3/4, play the ball slightly behind center and shorten my follow through......... this also help keep the ball low and under the wind or trees.

What do you mean by keeping your shaft straight on your backswing?

straight down the target line.

try chipping with wedges and you will find that if you take the shaft back down the target line you will hit your chip on line with the target.

try taking the club inside the target line and you will pull your chips

try taking the club outside the target line and it will go right

Tempo, tempo, tempo. Maintain a consistent and constant grip pressure throughout the swing. I am sure that there are very few of us on this board that have the talent to go at it 100% on every swing. Try and throttle back to a swing that feels more like 90% in your head.
