We normally still play skins, but there is always some kind of side bet, usually a Nassau. Sometimes there will be a Nassau on two man teams best ball as well.

Another game we all liked was skins with carry-overs and you had to validate on the next hole by winning or tying it. Made for some interesting matches.

We like to play robins which means every six holes you get a new partner. In the robins we play 2 dollar automatic presses. We also play skins , greenies and 9 hole individual bets. At the end of the round it takes an accountant to figure out the scorecard. Good thing there is one in our group.

I have played a few times with a group that played the game you describe. I agree about figuring out who owes whom.

We also have played "Wolf" when we have had an uneven number. If you don't know what Wolf is, each player is assigned a number in sequence and each tees off in order moving back one player on every hole. the first player is the "wolf" and after each subsequent player tees off the wolf can decide if he wants that player for a partner or not. Once the last player has teed off, the wolf can take him or go "Lone wolf". "Lone wolf" means you are playing against the entire group alone. Scoring is just like normal skins except it is against teams.
