Not for lack of trying, but I don't seem to be able to understand the meaning of "up and down." I've looked at several online golf glossaries and my takeaways have ranged from "overcoming trouble on a hole to save par" to "one-putting." Help! I want to track stats well but can't track if I don't know what it means.

IMO it means you get up in one shot and down on the next shot. So, it takes you two from where you're trying to get up & down. Of course, I've been wrong before.

thats what i always thought it was. If your chipping i thought an up and down was a chip and a 1 putt. Or it is a 2 putt to save par or something.

Does an up and down occur only when you don't par the hole? Or when you don't get GIR? Or is it any time you one-putt? I don't see how it could be the latter; otherwise it would just be called one-putt.

Technically you can "get up and down" with any score. It just means, generally, hitting the ball on the green and making the putt. It can be for bogey, birdie, anything.

Scrambling is defined as "This is the percent of time that a player misses the green in regulation, but still makes par or better." If you want to know the definition of other stats, the definitions are at the bottom of each of the complete stats pages here: http://pgatour.com/r/stats

Up and down can be from anywhere whether it be out of the trap or from the fringe. It is kinda how you interpret it.

well that pretty much answers it.

I would say if you are keeping stats though if you are in a nasty bunker would you count that the same as being 20 yards of the green. Then again if you are keeping stats I guess you should have never gotten in the bunker in the first place.

You can get up and down from 250 yards for an eagle, but only if you hit the green and one putt. As mentioned above, it means nothing more or less than hitting the green from somewhere off the green, then holing the remaining putt.
