i know i should know this but...

what is the definition of bounce? (e.g this 56-degree wedge has high bounce, while the 53 degree gap wedge has low bounce)

Bounce is defined on one sight as:

Definition: Measurement in degrees of the angle from the front edge of a club's sole to the point that actually rests on the ground at address. The middle or rear of many soles is lower than the front edge. Bounce is most commonly applied to wedges. More bounce will keep the club from digging too deeply into turf or sand.
The amount of bounce needed depends on conditions. If you play courses with soft, fluffy sand, you'll need more bounce. If the courses you play typically have harder sand, you'll need less bounce. Playing from fairway - less bounce.

The type of swing can influence the amount of bounce needed, too. Players who swing their wedges steeply into impact need more bounce. Players who sweep through and undercut need less bounce.

The article is great, but I prefer to think of it like this: Bounce is a number that represents the number of times in a given round that the wedge is going to "bounce" off of a tight lie, into the middle of the ball, sending it shooting 5 feet off the ground onto the next tee box. Then "loft" also doubles as the number of feet you can throw the club after a "bounce" without injuring your back.

thats a good way to think of it

personally I do not look at the bounce of a club, since we are all not rich enough to swap out identical clubs with varying lofts and bounces based on what course we play, therefore I pick out relatively neutral clubs ^^;

I disagree. I can throw my 48 degree PW much farther than my 60 degree Cleveland Classic.

You forgot the bounce part, remember its important to almost break your clubs by bouncing them o.O
