anybody ever made mashed potatoes with them purple potatoes? if so what did it taste like? (this might be a strange question but i didn't know where else to ask this)

The purple potato chips taste about the same, so I would imagine… they'd taste about the same.

They could go well with green eggs and ham.

Had some Salmon with thin yellow carrots at this one restaurant that served these potatoes mashed. Tastes roughly the same, I think it was more for the color arrangement than anything else.

Awards, Achievements, and Accolades

Papas are native to South America, and they have retained a lot of the original sub-species and varieties.  They come in a rainbow of colors ;provided by carotenoids.  The flavor of all of them is slightly different, but they all taste like potatoes.  I ran into them in Peru and Bolivia.
