I have been golfing for 4 months now. I picked up a used set of low quality clubs and as I improve my skill I would like to improve my bag. I was looking at the X2 hot irons which are $350 new and seem to be good irons. I am 6'7" so obviously standard size will not fit me. If I buy a new set of irons in a shop such as golf galaxy or dicks, will they add extensions and adjust the loft/lie for free?

It probably varies shop to shop. The place I went to in San Diego , Fairway Golf, charged $35 waived if you buy from them. I spent almost an hour and a half with the fitter trying a variety of irons and shafts.

You might be surprised.

A close buddy is 6'6" and plays standard length clubs.  He's tall, but his arms are proportionate to the rest of his body, and as a result, his clubs fit the same as mine....

It depends on your WTF measurement too, not just height, but you may well need longer shafts at 6'7". A fitting is a very good idea, but if you're going to the trouble, there's more to a fitting than just shaft length and flex. Which shafts can make a big difference too.

The quality of free fittings at Dick's and Golf Galaxy can vary from awful to great even within a store, you'll have to do some homework to find out. I'd like to get 5-10 years out of a set of clubs, so I'd go to a PGA Superstore (free) or even pay Club Champion myself to get it right. Way better selection at PGA Superstore (same pricing as Dick's/Golf Galaxy) or Club Champion too. There may be better club fitting options near you.
