So I am finally getting a stiff shaft for my driver and I am looking at these 3:

Aldila NV 65 Stiff with 0.350 tip diameter LOW-MID launch

or

UST Proforce V2 Stiff with 0.350 tip MID-HIGH launch

or

Grafalloy Blue Prolaunch 65 with 0.350 tip HIGH launch

My driver has a 10* launch, so what would best suit me? A lower launch to keep it relatively low?

I could be wrong but I think the V2 is one of the lowest launches out there. Seem to recall Iacas commenting in a number of places that he's a fan for that reason....

The NV line are quite a lot of shaft and I think generally play quite stiff-to-flex.

Your driver has a 10° loft ; very different from launch. Do you currently hit a high ball with the driver? Does it balloon?
