should my left shoulder be facing the target? tring to figure out if im pulling my irons or if im lined up wrong

Ideally parallel to the target line. Check out some AK swingvision vids on youtube, his feet, knees, shoulders, hips are parallel to the target line. Great setup IMO.

I think my problems surface because of this issue. I pick out a spot behind the ball, then go to set up and my feet are ok. I think what I do then is kind of turn my left shoulder inward because I feel that gets me lined up, when in fact it will make my draw into a hook. Like Scott said, parallel is where it should be but it's very easy to pull that sucker in once you are at address.

Go get a dowel from the hardware store, place it in the ground about 5 yards infront of you down your line, have it sticking out of the ground at an angle pointing down the target line. Then aim up to that, you will find that there is an optical illusion when you address the ball from the side, majority of people will think they are looking at the target when they are looking out to the right. This will give you a reference point for your eyes.

I think, and in my experience, the line across your shoulders absolutely has to be parallel to where you want the ball to go, since your swing follows your shoulder line. You can check this alignment by laying a club on the ground in front of you through where a ball would be, and pointing to a "target", and taking your stance. Then, without moving your body at all, pick up the club and lay it across your shoulders to see if they are parallel to the club on the ground.
