If you're hitting the 60˚ the same distance as your 56˚ (or just 3 or 4 yards shorter), you must be delofting it even more than your 56˚.  I hit my 54˚ 100-105 with a stock swing and my 60˚ goes more like 80-85.  When I'm swinging aggressively, I also find it pretty easy to deloft the 60˚ too much on full shots, hitting it 95-100 yards, then working against that and hitting a weak high fade that goes 65 yards and off to the right the next time.  Those are worst case, but you get the point.

There are many green side type shots where I don't see a ton of flying distance difference between by my 60˚ and my 54˚ (which is even more gap than you have).  But in situations where you can get spin (ie, without tons of grass behind the ball) I see a very noticeable difference in total yardage, with shots with the 60˚ flying only a bit higher and landing just a tad shorter, but with noticeably more spin resulting in significantly less roll out.

I hit the 60 about 10y less, but still over 100y which I was not expecting. Maybe that isn't all that weird. I know what you mean about the deloft. I definitely think I did it a few times accidentally because the ball came out low. But most of the time I was skying the balls and still getting more distance than I expected.
If you feel like it's not fitting the niche that you need it to, feel free to bend it to 62. Keep in mind that it will also change the bounce angle. In this case, it will increase it about 2*.  The largest difference that I notice between my 56* and 60* is the amount of spin that I'm able to generate on less than full shots.
Yes, I am seeing a lot more spin with the 60, but I'm not swinging all that much harder than the 56 and distance is similar when it comes to partial swings. At least it feels that way...
