When hitting off mats, I tend to draw the ball much better.  I know that mats are very forgiving, but my swing path is the same on mats vs. grass.  Why would my ball flight change?

you are probably fatting it - hitting behind the ball. On the fairway this will just chunk it, but on a mat it will tend to flip the clubface closed - we call it a drop kick. Lean to close the face through other means - it's not difficult. A stronger grip, more hand rotation, a closed clubface at address all help. then work on hitting ball first, then mat

You can tell you hit fat on a mat when the trajectory of your ball doesn't have that penetration. It goes up, then flattens, stays flat a little longer. Same flight if you hit fat on grass.

Find a grass range, figure out how to hit ball first, divot after the ball. It's a totally different feeling than hitting fat. Then remember it and you'll be good on the mats. The ball shoots off the clubface when you hit the ball first with a flat wrist compared to chunks.
