I never know for which pitch shots to put my feet perpendicular to the target, or when to turn them a little sideways.

This is what I mean:

O

[]        []

--------------------------------------------------------

or...

O

\\        \\

--------------------------------------------------------

The "O" is the ball and the "[]" and "\\" are the feet.

For which pitch shots are you supposed to use which stance?

I have been taught the top position, which is the most natural and relaxed.  The front foot is flared a bit out from perfectly perpendicular.  I find that when you put your body in unatural stances, you tend to straighten out during the downswing.  the second stance would cause me to hit out to in.

Oh, so the second one should never be used? What about on little chip shots from just off the green?

When I do go out to a golf course, I usually use the first stance for pitching over 20 feet, but sometimes I use the 2nd stance if I'm closer to the hole than that.

Find what ever is comfortable for you. I tend to pitch with a short stance, maybe 4-5 inches apart, and my left foot slighly open, maybe 15-20 degrees to promote body rotation. I vary the ball position depending on how high i want to pitch the ball.

Inside 20 yard and my stance becomes open.  If I'm hitting a 40 yard shot its more square.

Its all about comfort as Saevel said.  My open stance keeps me from making too long of a backswing and also from getting too inside and then allows more body rotation with a shorter less forceful swing.
