The difference is in looks only. There are no pros or cons as far as I know.

Some people like the cleaner look of stepless shafts and then never notice them again after their first round with them.

The steps serve a function. It's "needed" in some shafts and not needed in others. I really don't pay much attention. I prefer the "look" of stepless but that's when I'm specifically looking at the shaft. When I'm playing or hitting balls I don't really notice or care.

I like the look of my Proj X's. Look much cleaner compared to DG's for instance

Not a fan of way sensicore shafts look (only have one - TA7 2-iron) but on contact?!? Oh yeah!!

I can't remember where I heard this from, but someone told me stepless just means the steps are inside the shaft instead of outside...makes no sense to me but could be plausible.  I've got PX's in my old TM RAC MB TP's, and whatever the stock shaft is in the Wilson Ci9 which is stepless I think. I prefer the look, but like others I don't really know if it makes a difference except in flex maybe.

Question for the Dark Prince, how do you like the Wilson CI9's? I picked them up near the end of the season and a fluke surgery has kept me from giving them a good workout and is holding up the process of getting  used to them. Hope to work with them over the winter after recovery. Other than that I like the look of the stepless shaft, but once you're out there on the course the only thing I focus on is the next shot.
