Been practicing with just my 8 iron at the range this week and noticed I'm taking deep divots. Not like trenches but deeper than a small scrape. Would this cause my shaft to potentially snap? It's new clubs I've had for a week and never had a brand new set before.

You shouldn't worry about the shafts breaking. Plenty of have folks out there have been abusing their clubs for  10, 20, 30 years without having to reshaft their irons. If shaft does break prematurely its because it was installed improperly. Only steel shaft I've actually split in the middle was one of those cheapo Apollo steel shafts.
