I've been wondering why this happens when I hit my irons from the fairway. At most, the grass where I hit will be slightly "disturbed" and a super small divot will be made.

Does anyone know why this happens?

Without seeing a swing it's mostly guesswork, but there are a few things that can cause it.

Chicken wing the left arm which will pull the club up, or lifting the arms going through the ball to try getting it into the air. A forward ball position can be a reason.

Taking a divot is not a requirement for playing good golf, but I would say it makes things easier since it is a good sign you hit down on the ball, and most good players do it. As long as the divot starts after the ball was struck of course. Not taking divots pretty much prevents fat shots, but you'll be more at risk for thin shots. How is your ball flight, and do you hit it thin on bad shots?

My ball tends to stay low when I hit it with my irons. And yes, I'd say I hit the ball thin on bad shots.

Well, if you are hitting low iron shots then I'd say your not hitting the ball fully solid.  When your at a grass range next, try intentionally hitting a little more down on the ball making sure you have good contact and the divot comes after the ball and compare your ball flights and see if there is a difference.  If you start digging some divots, you have a better chance of hitting more solid iron shots.
