I am based in Frankfurt (central Germany) so can try and provide some info.

There are some fantastic courses in Germany but they tend to be scattered around. There is no one go to area. Hence I would say you would need to provide a little more info on where you will be travelling.

I find that this site

http://www.top100golfcourses.com/golf-courses/continental-europe/germany

is good for getting some overview of the best courses and you can also locate them easily on the maps and focus on specific areas you are travelling to.

If you have any specific questions, add them in the thread or PM me and I will try and help where possible.

Definitely check out Golf Club Budersand Sylt. One of the best Europe. Beautiful course on the water.

I've been there! The course is a proper links track. Sylt island is a little tricky to get to (It was about a 3hr train ride from Hamburg) but totally worth it, it's unlike anywhere else in Germany. The hotel is amazing as well! - Fun fact, the lady who owns it is one of the family who owned 'Wella'.

Lots of good courses in the Bavaria region too - which is the opposite end of the country.
