I been using a LW or SW and using a putting style when there lots of green to work with. . Its much like an uphill putt when I line up with the putter's lower edge except I line up with the top edge or the upper score lines of the wedge and de lofting the face for downhill running chips.

This video is a little old but I really like the main focus of Jordan's chipping when he says "always keeping that left wrist dead square through the ball".  Speith also even says this is important in other shots, especially wedges.  Even when he's trying to hit it higher he is keeping the left wrist square through impact.  He opens the face a bit and puts the ball up in his stance.

Back to the OP's main point, I think that weakening the grip helps this because your hand is already set into a position where it is pointing towards the target and you can think about keeping it going in that direction after impact.
