Adjusting Forged vs. Cast Irons

Yes, but generally for shaft stiffness, length and grip. The lie angle is not easy to do with a lot of cast clubs except at the factory. I am guessing that they use a really strong machine that somehow does not work harden*** the material. In some cases, they have different heads cast in 2 degree increments, and you would special order them. ***This is an undesirable process where it weakens the metal by "working it" beyond the standard stress levels.

PING literally beats them with a hammer, then throws away the ones that break in manufacture. They do design the hosel to bend more easily than their older designs though.

Not very much. I was there this summer, they don't break many hosels.

That's why they have the little cut out in the hosel. It lets them bend easier than, say, the eye 2's.
