It depends on what hybrid model you're using. Some hybrids have wide soles and are basically the same as a fairway wood. Others are more like irons. Likewise, some fairway woods today are so shallow-faced that they don't really resemble woods, and they launch the ball extremely high.
I play a Titleist 910F fairway wood and Adams Idea Pro A12 hybrids. The 910F is a fairway wood: I can hit it off the tee, or off of the fairway. I can hit it from the rough only if I have a very good lie. I wouldn't think off hitting it from a bunker. It's tough to hit it really high from the turf. It's easy to draw it off the tee. The A12 Pro hybrids are more like a long iron than a wood--but a very forgiving long iron with a hot face and low COG. I can hit them high, low, draw, or fade. I can hit them out of the rough (from a reasonable lie). They're much more accurate, and I can control the shape much better, than a FW wood, but they don't go as far.
You can buy hybrids and woods that are basically the same club. But you can also buy models that are very different and serve very different purposes.
