I'd take the 5W and the PW.

For one they are the clubs I hit the best.

Also I think I cover a lot of bases between short-game, distance and the ability to get both over and under obstacles.

I think that's exactly what I said, because I feel like an open the 7-iron up a bit then pitch it on the green, and still have a 150 to 160 shot when I need it.

Playing in 2 club with putter 2 man scramble this weekend and found this thread when looking for ideas.  I was planning on 4 hybrid and 50° gap wedge.  This thread helped confirm that thought.  Loved reading the comments!

Sand wedge and 7 iron for most courses.

My SW is my 120yd club and my 7 iron is typically 195 but I can get over 205 if I sting it off the tee. 
 

These two clubs I think cover you for punch shots, tee shots, bunkers, and chipping. The only thing you would struggle with is putting.

For me that would be 5 iron and PW for most courses. The 5 iron for 165-225 yards shots and the PW from 165 and down. 

For short courses I would maybe consider 8/9 iron and a putter. 

In the bag: Callaway Mavrik SZ 10,5 driver (X stiff), Cobra King 4 wood (Stiff, 2006 model), Callaway Mavrik irons 4 - P+A (stiff), Cobra King Pur wedges 52, 56 and 60 (stiff) and Odessey white steel putter.  Very happy with the set and the gapping.

I was just thinking 7 wood and 50 degree gap wedge. 7 wood is quite versatile.
