I find there is not much margin for error for a downhill chip on a fast green.  Miss it by a little and you might end up with a second shot that is an uphill chip.  I'd prefer to just start with the uphill chip.

It's my understanding that depending on the steepness, an up chip, pitch, or putt offers a sort back stop , due to higher part of the back of the cup that makes it easier for the ball to go into the cup. An uphill roll also provides more hole to work with. A down hill roll could make it easier for the ball to roll across the top of the hole, and provides less hole to to work with.

Uphill can be easy as well but the green works against the ball  Taking that into account and not  giving the hole away by taking away the break  I  prefer to bump and run uphill ones and chipping downhill ones 

Amazing how golf works. I do exactly the opposite! On downhill chips I might use an 8 or even a 7 iron depending on the lie, and I try to get the ball on the green and rolling ASAP. For uphill chips I'll take a PW or 9 iron and try to fly it part of the way to the hole.
