The tl;dr is type of ball, tape, simulator settings. Nice man cave he has there.

So next time I'm interested in a new set of irons, should I not only bring in my current 6 iron, but also have them tape the face the same as the demo?

I'd say yes. For the sake of comparison you want the conditions to be the same as possible.

Has anybody ever actually gone to demo irons and the fitter taped them up? I've only seen it done on woods.

Only when they don't have the demo irons. If they pull it off a display set, I've seen them tape it up.

I always bring my current club for comparison when I test new clubs.  It keeps the salesperson more honest and I find they treat me with a bit more respect.  The video was very helpful in demonstrating the effect different balls and tape can have on the results.

Only once has the shop taped up a club and that was because it wasn't available on the fitting cart. It's informative but I wouldn't make any purchase decisions from a trip to the GS or GG sim, PGA SS is better because they typically have stocked carts.

I like demo days at the local course. Company reps, I can hit my usual ball if I can afford to waste a few and compare with my current clubs. Usually the have TM or FS and I know what my numbers are with my current clubs so that's the baseline.

I hate that guy, that room is AWESOME.

Yeah I'd love to have space in my house to dedicate a room like that to golf.  He should lock that door, someone walking in could get killed if they walk in at wrong time.  I also wonder how many times he hit that high hat light right in front of the screen.

But if you land your shot on the green the crowd applauds.
