Dinner in Seville Spain this evening. Calamari, steak, fried anchovies, ox tail, etc. Christopher Columbus is in the building behind us. Not alive of course.

Making green tomato relish.  This is 2 batches and should be @ 16 pints. We way over bought ingredients so I guess they will holiday gifts this year.  I think we will have close to 80 pints when done.

Detroit pizza is awesome IMO.

Breville toaster ovens (or countertop ovens, as they like to market them) are great appliances if you have the counter space for one - they have a large footprint.

My wife and I got the original one as a wedding gift in 2009 and had it close to 10 years, and then I got a demo unit of the Breville Joule smart oven+air fryer for beta testing (I'm a member of Breville's research kitchen so I participate in focus groups and trials for new products). These multi-purpose ovens are surprisingly versatile, the new ones have 2 levels of convection, and have a large enough volume so they can handle things like a roast chicken no problem.

The only things I don't like about it is that (1) it is a PITA to clean, and (2) it makes toast really slow compared to a traditional toaster, like 4-6 minutes or longer depending on how toasted you like toast.

Nope. Herb butter under the skin in a convection oven, dry brined for 24 hours. Makes for very crispy skin. It cracked when I carved it.

I love eating turkey skin. It’s the main reason I cooked it in the oven this year after smoking it for the last three years in a row.
